Since 1995—Chef Volker Romeike's Five Star Diamond palapa icon, Pacific Rim-meets-Baja, 400-label wine cellar. Pitahayas has been one of Los Cabos' defining fine dining experiences since it opened in May 1995, earning the American Academy of Hospitality Sciences' Five Star Diamond Award every year since 1999. Led by Executive Chef Pilar Silva—whose Pacific Rim philosophy was shaped by years in Hawaii absorbing Pacific Rim cultures—the menu fuses Mexican ingredients with Asian technique: duck lumpia with papaya salsa, taro tostada with carnitas, tuna poke with watermelon and chili. The dramatic beachfront palapa at Hacienda del Mar frames every dinner with Sea of Cortez views and sunset light. Below the restaurant, La Cava de Santiago wine cellar holds over 400 labels with Wine Spectator Award recognition for 12+ consecutive years. Pitayitas Bar stays open until 1am.
